Crispy Oven Chicken

    Chicken parts, skinned
1/2  Cup corn meal
1/3  Cup melted butter
1/2  Cup flour
1/2  tsp. salt
1/4  tsp. pepper
1/2  Cup milk
1/2    tsp. crushed oregano
11/2  tsp. chili powder

Combine dry ingredients. Dip chicken in milk and coat with ingredients. 
Place in baking dish and drizzle butter on. Bake in preheated oven at 375 
for about 1 hour. Till Done.

Meat Loaf
(Serves 6)

1½  lbs. lean ground beef
   1  large onion, peeled and finely chopped
   3  garlic cloves, peeled and chopped fine
1½  tbs. olive oil
2½  tbs. chopped  fresh lovage (oregano/sage mix may be substituted)
  2  slices of brown bread, crust removed
      salt and pepper
      

1.  Put the ground beef into a bowl, and add the onion, garlic, herbs, salt and pepper to taste.
2.  Soak the bread in milk for 5 - 10 minutes, then squeeze as dry as possible.  Add to the beef mixture.
3.  Mix all the ingredients together with the hands.
4.  Put the mixture into a greased 2 lb. loaf pan, cover with foil and bake at 350º F for 1½ hours or until done.
5.  Turn out onto a serving dish.  Serve hot or cold in slices.

Brownie Bottom Pie
(Serves 6)

    Ingredients

  4  oz. of semi sweet Baking Chocolate pieces
  1  Stick butter
3/4 Cup sugar or less
  2  Eggs (slightly beaten)
  1  tsp. vanilla
1/2 Cup flour
1/2 Cup chopped nuts (optional)
2 1/2  Cups cold milk
  2   Pks. Jello Instant Chocolate Pudding and Pie Filling (sugar free if you can find it.)
       Cool whip topping (thaw)

Heat oven to 350 degrees (325 for glass pie plate). Grease sides and bottom of nine inch pie plate. 
Microwave butter and chocolate chips until melted. Stir in sugar, eggs and vanilla. Mix in flour and then
nuts. Spread in pie plate. Bake 25 to 30 minutes until knife inserted comes out clean. Cool.

When brownie mix is cool:
Pour milk in large bowl and mix in pudding mix. Beat with whisk or spoon one minute. Let stand 2 minutes.
Pour over brownie mix. Spread thawed cool whip on top. Sprinkle a few extra chocolate pieces on top for
looks.

Refrigerate until ready to use.

Total preparation time: 15 minutes.

    "Ingredients:"

  2  Cans (16OZ) Pork and beans undrained
1/2 Cup onion diced
1/2 Cup ketchup
  2  tps Worcestershire
  8  slices crispy bacon bits
1/4 Cup brown sugar
  2  tbs mustard

    "Preparation:"

1. Preheat oven to 350°F
2. Mix together
3. Bake uncovered for 45 minutes at 350.
4. Stir every 15 minutes.

Potato Biscuits

1 Cup Mashed Potatoes
2  tbsp. butter
2  Cup flour
1  tbsp. honey
1  Cup buttermilk
2  tbsp. baking powder
1 tsp. brown sugar
1/2  tsp. baking soda

Mix ingredients and roll out on wax paper. 
Cut biscuits and bake at 400 degree F. about 10 min.

Sweet And Sour Meat Balls

    Meat Balls
1  lb. ground beef
1  egg
1/2  Cup dry bread crumbs
1/4  cup milk
1/2  tsp. Worcestershire
Mix together. Roll into small balls. Microwave until almost done.  

    1/2 Cup brown sugar
1  tbs soy sauce
1/3  Cup vinegar
1  tbs. cornstarch
1  green pepper chunks
13  oz pineapple chunks

Mix all ingredients except pepper.
Bring to boil and Reduce heat.
And meat balls. Simmer for 10 minutes. And Pepper. Cover and simmer for 5 more minutes.

Potato Salad (Nellie)

    "Ingredients:"

6  Big potatoes (Cook potatoes in boiling water 15 to 20 minutes or until well done
    and drain.) Mash the potatoes.

1  tbsp. sugar
1  tbsp. French mustard
1/2  Cup Salad Dressing
6  hard-cooked eggs (sliced thin)
1/2  Cup yellow onion (chopped fine)

Mix all ingredients together and put in Refrigerate until ready to serve.

"Little Stinkers" Ramps

    "Ingredients:"

1  bushel Ramps
1  Good woman to clean them
1  exceptionally good woman to cook them.
1  tbsp. cider vinegar

    "Little Stinkers" Preparation:

Cook Ramps in boiling water 15 to 20 minutes until tender. Drain.
Into a large skillet, heat enough bacon drippings to coat the bottom of the pan:.
Toss the boil Ramps into the Skillet.
Fry Ramps until lightly browned
Prep Time:25 Mins.

    "Ramps:"



A wild leek (Allium tricocum) with edible leaves and roots. Found in the woods of upper elevations, it's eaten raw or fried with eggs or just make plain old ramp sandwiches. The plants grow about a foot tall and, when eaten, a strong odor emanates from the skin of the ramps gourmand.

   

"Festival:"


The Richwood Ramp Festival in West Virginia is held in middle of April and will cook 25,000 to 30,000 pound of the "little stinkers" will be served with ham, bacon, fried potatoes, brown beans,cornbread, and dessert.

The Cosby Ramp Festival in Tennessee is held annually the first Sunday in May and features the coronation of a ramp queen, folk arts and crafts and, of course, plenty of ramps for your dining pleasure.

Wellsburg Ramp Festival in West Virginia.

Richwood, West Virginia appears to be the birthplace of the Ramp Festivals for the United States.

WHITETOP MOUNTAIN RAMP FESTIVAL, GRAYSON COUNTY, VIRGINIA : - The third Sunday in May at Mount Rogers Fire Hall on US 58 in Whitetop Community. Features music,dancing,games,crafts and a ramp-eating contest. A ramps meal with barbequed chicken.

Good morning Houston..... this is "Philadelphia". U may not have seen "The Weekend Show" on CBS this morning....but they had one of this big name New York City chef who was doing some cooking on the show.... guess what he was using in one of his fancy dishes: "ramps" Said there were nothing like them to flavor a dish but they were expensive: $10 - 12 a pound in New York... partly due to the fact that the season was so short: 5 - 6 weeks. Maybe we ought to move back to WVA and grow ramps for a living. And here I thought ramps was just for u ole hillbilly kinds of people.... even civilized people like them... hahah...

"Fried Green Tomatoes

1 Medium or Large Green Tomato
 Salt
 Pepper
 Bacon drippings
 White cornmeal

    "Preparation:"

Slice tomatoes about 1/4 inch thick, season with salt and pepper:
Then coat both sides with cornmeal:
In a large skillet heat enough bacon drippings to coat the bottom of the pan:
Fry tomatoes until lightly browned on both sides.
Prep Time:10 Mins.

Forgotten Cookies

    "Ingredients:"

2 Eggs
1/4 tsp. salt
3/4  Cup sugar
1 tsp vanilla
6 oz. chocolate chips

    "Preparation:"

Beat white of 2 eggs with 1/4 tsp salt until still Stiff
And 3/4 cups sugar and beat in tsp vanilla and 6 oz. chocolate chips
Drop in mounds on cookie tray.
Put in preheated oven (350) and turn oven off.
Leave in until next morning. (important) Do not open oven door until then.

Roasted Potato Salad

    "Ingredients:"

4 Cup quartered,UN-peeled small red potatoes
1 cup Salad Dressing
4 slices Bacon, chopped, crisply cooked or crumbled.
2 hard-cooked eggs, chopped
1/4 tsp.salt
1/4 cup sliced green onions
1/4 tsp.pepper

    "Preparation:"


Place potatoes on 15x10x1-inch baking pan sprayed with no stick cooking spray.
Bake at 425 degree F. for 30 to 35 minutes or until potatoes are tender and golden brown, stirring once.
Mix salad dressing, bacon eggs,onions,salt and pepper in large bowl.
And potatoes: mix lightly
Serve warm or chilled.

BUTTER PAN (USUALLY 8X8 PAN)
PEEL, SLICE AND PLACE APPLES IN BOTTOM OF PAN
MIX TOGETHER:
1 1/2  CUP SUGAR
1  CUP FLOUR(SELF RISING)
1 1/2  TSP (I PREFER 2) CINNAMON
1  STICK BUTTER / MARGARINE

    "Preparation:"
POUR OVER APPLES (IT WILL BE MORE THE CONSISTENCY OF A CRUMBLE)
AND THEN SPRINKLE WITH WATER.
BAKE AT 350 FOR 35 MINUTES
This is really good served with vanilla ice cream.

BUTTER PAN (USUALLY 16X16 PAN)
1 lb  Margarine or Butter
1 lb  Velveeta Cheese
4 lb   Powdered Sugar
1 cup  Cocoa
11/2 cup  Nuts (Chopped)
2 TSP  Vanilla

    "Preparation:"
BUTTER PAN (USUALLY 16X16 PAN)
Melt margarine & cheese together over low heat or microwave about 3 minutes. In large bowl mix powdered sugar & cocoa together. Pour hot margarine & cheese mixture over the sugar & cocoa mixture and mix throughly. Add vanilla & nuts. Press into a 16 x 16 pan. Cool About 15 Minutes. Cut in squares. Keep in refrigerator. Makes enough for a big party.

3 oz  Cream Cheese or one (3 oz) package
2 1/2 cups(8oz)   Powdered or confectioner's Sugar
2  tablespoons of Peanut Butter ( I use Reese's Creamy )
1/4 cup Nut  ( I use Pecan Pieces) but salted peanuts (chopped),will work fine.

    "Preparation:"
BUTTER PAN (USUALLY 5 X 5/8 X 6 PAN)
Cream the cream cheese and add sugar and remaining ingredients. Mix well. Press into greased, shallow pan and refrigerate 15 Minutes. Cut in squares. Keep in refrigerator.

Velveeta Cheese Chocolate Fudge
and Peanut Butter Fudge
In one large Pan


No cooking.

Ingredients (12 servings)


1/2 lb Margarine or Butter
1/2 lb Velveeta Cheese
1/2 cup Cocoa--I use (Hershey's Cocoa)in an 8 oz.can)
2 lbs Powdered Sugar
3/4 cup Nuts (I use Pecan Pieces), (Chopped)
1 tspVanilla

Instructions


BUTTER PAN (USUALLY 15 1/8 X 5/8 x 10 1/2 PAN)
Melt margarine & cheese together over low heat or microwave about 3 minutes. In large bowl mix powdered sugar & cocoa together. Pour hot margarine & cheese mixture over the sugar & cocoa mixture and mix throughly. Add vanilla & nuts. Press into a 15 1/8 X 5/8 x 10 1/2 ( only use 1/2 of the pan.) The other half is for the Peanut Butter Fudge candy---

Step Two

Peanut Butter Fudge

8 oz of cream cheese
61/2 cup (8oz) Powdered Sugar
5 1/2 tsp Peanut Butter (I use Reese's Creamy)
3/4 cup Nuts (I use Pecan Pieces)


Instructions


BUTTER PAN (USUALLY 15 1/8 X 5/8 x 10 1/2 PAN)
Cream the cream cheese and add sugar and remaining ingredients. Mix well. Press into the other half of greased pan,and cool About 15 Minutes. Cut in squares. Keep in refrigerator. Makes enough for a big party.

CREAMED ONIONS

12 small white onions, peeled
2 tbs flour
 dash of black pepper
 pinch of nutmeg
1 cup milk
3 TSP butter

    "Preparation:"

Peel onions. Place in boiling water and cook for 15 -20 minutes... till tender but not over done. Drain and place aside. In separate pan melt butter, whisk in flour, pepper and nutmeg and cook 1 minute. Add milk and cook till thicken. Stir in onions and serve warm...
